I simply love beans! Any and all beans! I am not a vegetarian but I choose to eat more beans, rice, veggies and fruits than anything else. And, for health reasons, I don't eat beef.
Here's one of my favorite quick, easy and nutritous "throw-together" meals. It can be used as a main course (as I use it) or as a side-dish.
The ingredients are readily available and inexpensive. The prep time is next to none and the yummy factor is very high!
White Bean Casserole
3 cans white beans (I use great northerns but any white bean will do or mix it up and use a variety)
1 can of Rotel tomatoes (or other diced tomatoes with spices and green chiles)
1 package frozen chopped greens (I've used turnip greens, collards, spinach - they are all good!)
4 slices of cooked bacon; broken into small pieces (I use turkey bacon)
1 tsp ground black pepper
Drain the beans. Drain half the liquid from the tomatoes. Cook the chopped greens then drain and squeeze all the excess liquid out. Mix all ingredients in a casserole dish. Cover. Place in 325 degree oven for 30-45 minutes or until heated through entirely.
Like I said, it's quick, easy and nutritious!

Me? Learn to be Thick Skinned? Never!

It seems to me that our society in general has become more cynical, more self-centered and increasingly rude. That fact is particularly clear to me when I have interactions with certain patients and their families at work. Last week, when pulled to another unit, I spent my whole day being be-rated, cursed at, yelled at.... over things that I had nothing to do with. Families were upset about some of the short-comings of the staff on nights for this particular unit and chose to take it out on me.
So, this week I was thrilled to be back on my own oncology unit where, for the most part, patients and families are a gentler breed, more appreciative, more soft-spoken. But alas, Tuesday night ended with and Wednesday morning started with very hostile words being slung in my direction. F-bombs galore. Cursing and swearing of all sorts. Name-calling of the worst kind. Guess I was just the closest person at the very time it became too much for these individuals to bear. My method of handling this sort of behavior? Listening, trying to diffuse it, and if all else fails, turning and walking away from it. - Hugs and tears upon discharge.
- Gentle touches and knowing glances during life's final moments.
- Words of appreciation for even the smallest kindness shown.
- A need to thank them for allowing me to be part of their care.
- A sense of a job-well-done as I left the building.
Hubby-Dearest often tells me that I "need to become thick-skinned" instead of allowing people to upset me to the point of tears. He's full of advice that might fly in the "work-a-day-world" that he participates in, but not in mine!
I happen to give 110% all the time -- at work, at home, in my volunteer settings. That, coupled with the fact that I don't want to be one of those "thick skinned folks," means that I'll never be able to do what Hubby-Dearest suggests. And I think deep down inside he knows that. I think he just hates to know that I've been pushed to the point of tears by anyone. Plus he's a guy who doesn't cope well with a crying woman. You'd think that after all these years (27 to be exact) he'd be used to it - but he's not. It still bothers him.
I am a nurse - and because I put my whole self into that role when caring for my patients, I occasionally find myself wishing I could be more thick-skinned -- but knowing without a single doubt that I'd never be able to put my head on the pillow and sleep at night if I were...
Rather, I prefer to live and act according to the same philosophy Charles Dickens spoke of when he wrote:
"Have a heart that never hardens, a temper that never tires, a touch that never hurts."

Happy Birthday Barbie...
Today is Barbie's birthday. Created by Ruth Handler, Barbie was created on March 9, 1959.
Barbie was named after Handler's daughter Barbara. Reportedly, Barbie has had more than 100 careers -- and is still counting!
I remember Christmas 1961 - the year I got my first Barbie doll. Back then, Barbies came in their bathing suits and high heels. Then you bought little packages with an outfit and all of its coordinating accessories. You could also buy small packages with teenie tiny shoes - all different colors and styles. OR, if you were like me, you didn't have the money to buy all of these outfits so you made your own clothes for her. My Barbie probably had at least six changes of clothes per day. Some more crudely made than others. But I treasured her and her wardrobe.
Today, if you want a Barbie dressed up in a particular style or themed outfit, you need to buy the doll already wearing it.... it's hard to find clothes "sans doll" in the stores! Guess that means that even today's Barbie fans have to make their own clothes unless they have money growing on trees in their backyards!
At the end of a very busy day, Barbie would go "home" to her now-vintage original case. It was years after I quit playing with Barbie that such things as the Barbie Mansion and Barbie's own car were available.

Easy Mardi Gras Recipe
Dear and Faithful Blog Followers...
Last night while attempting to post an easy Mardi Gras recipe for you, Blogger and I encountered a few problems! So, if you received a 'teaser' in the form of an image like the one to the left and the promise of a recipe I apologize...
To be perfectly honest, I don't know what the problem was but I wrote the blog, previewed it and when I was satisfied with it I hit the "publish post" key... and voila! Ooops... no voila! Only a portion of the post appeared. I re-did it four - count 'em - four times and every time I tried to publish...same incomplete results.
So, let's try this again. And even though you didn't get the recipe in time to try it for Mardi Gras, I'd wager a guess that even those of you who are giving up something edible for Lent won't find this to be on your forbidden list!
Slow Cooker Easy Red Bean and Vegetable Soup
Ingredients:
3 large sweet red peppers
3 celery ribs, chopped
2 medium onions, chopped
4 (16 oz) cans dark red kidney beans, rinsed and drained
4 cups chicken broth
2 bay leaves
1/2 tsp salt
1/2 tsp Cajun seasoning
1/2 tsp ground pepper
1/4 tsp hot pepper sauce
Directions:
Combine beans and vegetables in 5-quart slow cooker. Add rest of ingredients and stir. Cover and cook on low for 6 hours or until all vegetables are tender. Discard bay leaf before serving.
This is a yummy and healthy soup. And with only 5 minutes prep time and 6 hours in the slow cooker ... well, what more could you ask for, right? !

Rain, Rain....
I know that we need the rain. And, I'm not complaining about the fact that it rained today... I'm just going on record as saying ...
It rained on our parade today - Caleb's and my parade, that is... Literally, we had to regroup and make new plans because of the weather. But, gray clouds and rain couldn't dampen the spirit of one lovable ten year old and his "Nan".
We had our day all planned out, but when we got up this morning and saw that the weather wasn't going to cooperate, we just got to work making a new plan -- and saving today's original outing for some other day.
Good thing Caleb is a lot like me when it comes to being fairly easy-going and flexible. Otherwise, it might have made for a really miserable day for both of us.
But Caleb and I manage to always make the best of - and get the most out of - our time together. That's a lesson we've learned along the way because we know how precious that time together is.
I'd like to report that we did something unique, something exciting, something new.... but, alas! With rain and wind to foil our outdoor plans, we headed to the book store (Caleb shares his Nan's love of books and reading) and then to a matinee. Nothing novel or festive - just good wholesome time together sharing life no matter what storm clouds tried to rain on our parade!
